- 1 cup unsalted butter, softened

- 4 large eggs

- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup raspberry jam
- 1/2 cup fresh raspberries
- 1/2 cup sliced almonds, toasted
- Fresh raspberries for garnish
Instructions
- Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans. In a bowl, whisk together flour, baking powder, and salt. In a separate large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix until just combined. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
- Bake the Cake: Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Prepare the Filling and Frosting: Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. Place the first cake layer on a serving plate. Spread a layer of raspberry jam followed by whipped cream. Repeat with the second layer. Place the third cake layer on top and spread whipped cream over the top and sides of the cake.
- Decorate: Press the toasted sliced almonds onto the sides of the cake. Garnish the top with fresh raspberries and additional almonds if desired.
Notes
- Ensure the cakes are completely cooled before assembling to prevent the whipped cream from melting.
- For a more intense almond flavor, add 1/2 tsp almond extract to the cake batter or frosting.
- Chill the assembled cake for at least 1 hour before serving to make slicing easier.
