Description

A delicious and creamy chickpea coconut curry that is flavorful and easy to make.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 1 can diced tomatoes
  • 2 teaspoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté onion, garlic, and ginger until soft.
  2. Add curry powder, cumin, and turmeric. Stir for 1 minute.
  3. Add chickpeas, coconut milk, and diced tomatoes. Mix well.
  4. Simmer for 20 minutes on low heat.
  5. Add salt to taste and garnish with cilantro before serving.
