Description

Enjoy your delicious Strawberry Coconut Truffle Bites!

Ingredients

Scale
  • 2 cups desiccated coconut
  • 1 cup fresh strawberries, finely chopped
  • 1 cup white chocolate, melted
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 cup freeze-dried strawberries, crushed
  • 1/2 cup extra desiccated coconut for coating

Instructions

  1. Prepare the Truffle Mixture:
    – In a large mixing bowl, combine 2 cups of desiccated coconut with 1/2 cup of sweetened condensed milk and 1 teaspoon of vanilla extract. Mix until well combined.
    – Gently fold in the finely chopped fresh strawberries.
  2. Form the Truffles:
    – Use your hands to shape the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  3. Chill the Truffles:
    – Refrigerate the truffles for about 30 minutes until they are firm.
  4. Coat the Truffles:
    – In separate bowls, prepare the melted white chocolate and mix the crushed freeze-dried strawberries with the extra desiccated coconut.
    – Dip each chilled truffle into the melted white chocolate, ensuring it’s fully coated. Roll it in the coconut and freeze-dried strawberry mixture immediately after.
  5. Set the Truffles:
    – Place the coated truffles back onto the parchment-lined sheet and refrigerate for another 15 minutes to set the chocolate.

Notes

  • Ensure the truffles are well-chilled before coating to prevent them from falling apart.
  • For an extra burst of flavor, add a hint of lemon zest to the coconut mixture.
  • Store the truffles in an airtight container in the refrigerator for up to a week.
  • If using unsweetened desiccated coconut, you might want to add a little extra condensed milk for sweetness and binding.
