Enjoy your delicious Strawberry Coconut Truffle Bites!
Ingredients
Scale
- 2 cups desiccated coconut
- 1 cup fresh strawberries, finely chopped
- 1 cup white chocolate, melted
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 cup freeze-dried strawberries, crushed
- 1/2 cup extra desiccated coconut for coating
Instructions
- Prepare the Truffle Mixture:
– In a large mixing bowl, combine 2 cups of desiccated coconut with 1/2 cup of sweetened condensed milk and 1 teaspoon of vanilla extract. Mix until well combined.
– Gently fold in the finely chopped fresh strawberries. - Form the Truffles:
– Use your hands to shape the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper. - Chill the Truffles:
– Refrigerate the truffles for about 30 minutes until they are firm. - Coat the Truffles:
– In separate bowls, prepare the melted white chocolate and mix the crushed freeze-dried strawberries with the extra desiccated coconut.
– Dip each chilled truffle into the melted white chocolate, ensuring it’s fully coated. Roll it in the coconut and freeze-dried strawberry mixture immediately after. - Set the Truffles:
– Place the coated truffles back onto the parchment-lined sheet and refrigerate for another 15 minutes to set the chocolate.
Notes
- Ensure the truffles are well-chilled before coating to prevent them from falling apart.
- For an extra burst of flavor, add a hint of lemon zest to the coconut mixture.
- Store the truffles in an airtight container in the refrigerator for up to a week.
- If using unsweetened desiccated coconut, you might want to add a little extra condensed milk for sweetness and binding.
