- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter, softened (At room temperature for best mixing.)
- 1 cup granulated sugar
- 1 large egg (At room temperature.)
- 1 teaspoon vanilla extract
- to taste Sugar for sprinkling on top (sparkling sugar works beautifully)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the flour, baking powder, baking soda, and salt. Set this mixture aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well incorporated.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Avoid over-mixing.
- Roll the dough into small balls (about 1 inch in diameter), then flatten slightly or use cookie cutters to make tree shapes.
- Place the cookies on the prepared baking sheet and sprinkle generously with sparkling sugar.
- Bake in your preheated oven for 10-12 minutes or until the edges turn lightly golden.
- Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
