Description

A hearty and flavorful slow-cooked beef dish perfect for any occasion.


Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 1.5 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Beef: Season the beef chunks with salt and pepper on all sides.
  2. Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add the beef chunks and sear until browned on all sides. Remove and set aside.
  3. Sauté Aromatics: In the same skillet, add the onions and garlic, sauté until onions are translucent.
  4. Deglaze the Skillet: Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the skillet.
  5. Combine Ingredients: In a slow cooker, combine seared beef, sautéed onions and garlic, halved potatoes, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Slow Cook: Pour the deglazed liquid over the ingredients in the slow cooker. Cover and cook on low for 8 hours or on high for 4 hours, until beef and potatoes are tender.
  7. Garnish and Serve: Before serving, stir in fresh parsley. Serve hot with additional parsley for garnish if desired.

  • Searing the beef before slow cooking enhances the flavor.
  • For extra richness, add a splash of balsamic vinegar before serving.
  • Adjust seasoning to taste before serving, especially salt and pepper.
  • If you prefer thicker sauce, mix a tablespoon of cornstarch with water and stir in towards the end to thicken.
