Ingredients

- 2 lbs beef chuck roast, cut into large chunks
- 1.5 lbs baby potatoes, halved
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Beef: Season the beef chunks with salt and pepper on all sides.
- Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add the beef chunks and sear until browned on all sides. Remove and set aside.
- Sauté Aromatics: In the same skillet, add the onions and garlic, sauté until onions are translucent.
- Deglaze the Skillet: Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the skillet.
- Combine Ingredients: In a slow cooker, combine seared beef, sautéed onions and garlic, halved potatoes, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Slow Cook: Pour the deglazed liquid over the ingredients in the slow cooker. Cover and cook on low for 8 hours or on high for 4 hours, until beef and potatoes are tender.
- Garnish and Serve: Before serving, stir in fresh parsley. Serve hot with additional parsley for garnish if desired.
Notes
- Searing the beef before slow cooking enhances the flavor.
- For extra richness, add a splash of balsamic vinegar before serving.
- Adjust seasoning to taste before serving, especially salt and pepper.
- If you prefer thicker sauce, mix a tablespoon of cornstarch with water and stir in towards the end to thicken.
