A delicious recipe for roasted glazed ham shank with a mustard and brown sugar glaze.

- 6 pounds fully cooked ham shank
- ¼ cup yellow mustard
- ¼ cup dijon mustard
- ½ cup brown sugar
- 1 cup water
Instructions
- Preheat the oven to 325℉ and line a roasting pan with aluminum foil.
- Place the ham fat side up in the prepared roasting pan. Whisk together the mustards and brown sugar and rub the mixture all over the ham (sides, cut side, top, everything).
- Pour 1 cup of water into the roasting pan, arrange the ham fat side up in the center of the pan, cover loosely with aluminum foil, and roast for 1 hour 10 minutes (~12 minutes per pound).
- 30 minutes before the cooking time is up, remove the foil, spoon the juices in the pan over the ham several times, and turn the heat up to 425℉. Cook uncovered for the remaining 30 minutes.
- Remove the shank portion from the oven and let it rest for 15-20 minutes before carving.
Notes
- Ensure the ham is fully cooked before reheating to avoid undercooking.
- Letting the ham rest before carving helps retain its juices.
