Description
Deliciously soft and chewy red velvet cookies loaded with mini chocolate chips.
Ingredients

- 1 cup salted butter, softened
- ¼ cup cream cheese, softened
- ½ cup confectioner’s sugar
- 1½ cups all purpose flour
- ½ cup corn starch
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- 1 teaspoon red gel food colouring (you may need to adjust this amount depending on the brand you use)
- 1 cup mini semi sweet chocolate chips
Instructions
- Preheat oven to 375F.
- Dump softened butter, cream cheese and confectioner’s sugar into a large mixing bowl.
- Use an electric mixer to cream together the ingredients until smooth and fluffy.
- Add the flour, corn starch and cocoa to the bowl.
- Continue mixing with the electric mixer until a sticky dough forms.
- Add the vanilla extract and red food colouring to the bowl.
- Continue mixing with the electric mixer until the dough is an even red colour.
- Add the mini chocolate chips to the bowl.
- Stir the chocolate chips into the cookie dough.
- Use a one tablespoon cookie scoop to drop balls of dough onto a parchment lined baking sheet leaving at least 1 inch between the balls.
- Use a fork to flatten the cookie dough balls.
- Place the baking sheet in the oven and bake the cookies until the tops are no longer wet and shiny, about 6-7 minutes.
- Use a spatula to transfer the cookies to some parchment paper on the counter to cool off.
- Serve and enjoy.
Notes
- Adjust red food colouring to achieve desired color.
- Store cookies in an airtight container for up to a week.
