Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the flour mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Make the Raspberry Frosting: In a large bowl, beat the butter until creamy. Gradually add powdered sugar, one cup at a time, beating well after each addition. Mix in the raspberry puree and heavy cream until smooth and fluffy. Add a few drops of pink food coloring if desired, and mix well.
- Assemble the Cake: Place one cake layer on a serving plate and spread a layer of frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting. Garnish with whole raspberries and decorative sprinkles.
