Description

Delicious Pumpkin Spice Cake Balls coated with orange candy melts and decorated for a festive treat!

Ingredients

Scale
  • 1 box spice cake mix
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1 cup cream cheese frosting
  • 2 cups orange candy melts
  • 1/2 cup chocolate chips (optional, for decoration)
  • 1/4 cup green candy melts (optional, for decoration)

Instructions

  1. Prepare the Cake:
    – Preheat your oven to 350°F (175°C).
    – In a large mixing bowl, combine the spice cake mix, pumpkin puree, vegetable oil, eggs, and pumpkin pie spice.
    – Mix until well combined and smooth.
    – Pour the batter into a greased 9×13-inch baking pan.
  2. Bake the Cake:
    – Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
    – Allow the cake to cool completely in the pan.
  3. Make the Cake Balls:
    – Once cooled, crumble the cake into fine crumbs in a large bowl.
    – Add the cream cheese frosting and mix until well combined. The mixture should be moist and hold together when shaped.
  4. Shape and Chill:
    – Roll the mixture into small balls, about 1 inch in diameter.
    – Place the balls on a baking sheet lined with parchment paper.
    – Chill in the refrigerator for at least 1 hour or until firm.
  5. Coating:
    – Melt the orange candy melts in a microwave-safe bowl, stirring every 30 seconds until smooth.
    – Dip each cake ball into the melted candy, allowing excess to drip off.
    – Place them back on the parchment paper to set.
  6. Decorate:
    – Optionally, melt the chocolate chips and green candy melts and use a piping bag to create pumpkin stems and vines on top of the cake balls.
    – Allow to set at room temperature or refrigerate for faster setting.

Notes

  • Ensure the cake is completely cooled before crumbling to achieve fine crumbs.
  • Use a toothpick or fork for dipping to keep the coating smooth.
  • For a fun twist, try adding a pinch of ground cinnamon or nutmeg for extra spice flavor.
  • Store cake balls in an airtight container in the refrigerator for up to a week or freeze for longer storage.
