- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon pumpkin pie spice
- 1 cup cream cheese frosting
- 2 cups orange candy melts
- 1/2 cup chocolate chips (optional, for decoration)
- 1/4 cup green candy melts (optional, for decoration)
Instructions
- Prepare the Cake:
– Preheat your oven to 350°F (175°C).
– In a large mixing bowl, combine the spice cake mix, pumpkin puree, vegetable oil, eggs, and pumpkin pie spice.
– Mix until well combined and smooth.
– Pour the batter into a greased 9×13-inch baking pan. - Bake the Cake:
– Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
– Allow the cake to cool completely in the pan. - Make the Cake Balls:
– Once cooled, crumble the cake into fine crumbs in a large bowl.
– Add the cream cheese frosting and mix until well combined. The mixture should be moist and hold together when shaped. - Shape and Chill:
– Roll the mixture into small balls, about 1 inch in diameter.
– Place the balls on a baking sheet lined with parchment paper.
– Chill in the refrigerator for at least 1 hour or until firm. - Coating:
– Melt the orange candy melts in a microwave-safe bowl, stirring every 30 seconds until smooth.
– Dip each cake ball into the melted candy, allowing excess to drip off.
– Place them back on the parchment paper to set. - Decorate:
– Optionally, melt the chocolate chips and green candy melts and use a piping bag to create pumpkin stems and vines on top of the cake balls.
– Allow to set at room temperature or refrigerate for faster setting.
