A quick and delicious chocolate berry mug cake that is perfect for a sweet treat.
Ingredients

- 1 large egg
- 2 tbsp almond flour (14 g)
- 1 tbsp hydrolyzed collagen (10 g)
- 1 tbsp melted butter or oil (14 g)
- 1 – 2 tbsp sweetener (15–30 ml)
- 1 tbsp heavy cream or milk (15 ml)
- 1 tsp cornstarch (optional)
- 1/4 tsp baking powder (1 g)
- 1/2 tsp vanilla extract (2–3 ml)
- pinch of salt
- 15–20 g chocolate chips
- berries
- white chocolate
- lemon zest
Instructions
- Preheat oven to 200°C (392°F), no fan and grease a ramekin.
- In a bowl, whisk egg, melted butter, sweetener, cream (or milk), and vanilla.
- Add almond flour, collagen, baking powder, cornstarch (optional) and salt. Mix until smooth.
- Batter should be thick, not runny. Adjust with almond flour, cornstarch or milk if needed.
- Pour into ramekin and add toppings.
- Bake for 10–11 minutes for soft center, 12 minutes for balanced texture, and 13–14 minutes for firmer cake.
- Let rest 2–3 minutes before serving.
Notes
- Adjust baking time based on desired texture.
- Add more sweetener if desired.
