Juicy and flavorful beer can chicken made in an electric pressure cooker.


Ingredients

Scale
  • 1 whole chicken (44 lbs.)
  • 12 oz beer (1 can)
  • 1 tbsp olive oil
  • 1 tbsp garlic (minced)
  • 1/2 tsp seasoned salt
  • 1/2 tsp garlic salt

Instructions

  1. NOTE: This only works with 8 qt. electric pressure cookers; it will not fit in 6 qt versions. Remove neck etc. from inside cavity if there is one and discard all innards.
  2. Pour 3/4 of a cup of beer from your beer can into your pressure cooker.
  3. Although you do not need to season your chicken, you can. Rub olive oil on the outside of your chicken along with the minced garlic. Sprinkle the seasoned salt and garlic salt on the outside of your chicken as well.
  4. Put your beer can with the remaining beer inside on the bottom, middle of your pressure cooker.
  5. Put the open cavity of your chicken facing down and lower it onto your beer can. Insert as far as it will go inside your chicken.
  6. Close your lid and steam valve, and set to high pressure for 25 minutes.
  7. For the Pot: use pressure, high, 25 minutes. For the Crock Pot Express: use pressure adjust (or manual pressure button), high, 25 minutes. Alternatively, you can use the poultry button for 25 minutes.
  8. Allow to naturally release for 10 minutes, then release the rest of the steam.
  9. Carefully pull out the chicken (it will be falling apart).
  10. If you want the skin crispy, set the oven to broil. Put the chicken in an oven-safe dish and broil for 3-5 minutes, or until the skin is as brown/crispy as desired. Alternatively, put it into a large air fryer, spray the top with olive oil, set at 400°F for about 6 minutes, or until crispy as desired.
