Description

A delicious bundt cake infused with fresh strawberries and topped with a pink glaze, perfect for any occasion.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup buttermilk
  • 1 1/2 cups fresh strawberries, diced
  • 1 cup powdered sugar (for pink glaze)
  • 2 tablespoons fresh strawberry puree (for pink glaze)
  • 12 tablespoons milk (for pink glaze)
  • 1/2 cup white chocolate chips (for white drizzle)
  • 2 tablespoons heavy cream (for white drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a Bundt cake pan.
  2. In a bowl, sift together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with sour cream and buttermilk. Gently fold in the diced strawberries.
  5. Pour the batter into the prepared Bundt pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
  6. In a small bowl, whisk together powdered sugar, strawberry puree, and enough milk to achieve desired consistency. Drizzle over the cooled cake.
  7. Melt white chocolate chips with heavy cream in a microwave or double boiler. Drizzle over the pink glaze.

Notes

  • For a more intense strawberry flavor, consider adding a teaspoon of strawberry extract.
  • Make sure the cake is completely cool before glazing to prevent the glaze from melting and sliding off.
  • For a smooth glaze, ensure that the powdered sugar is sifted before mixing with the liquids.
