Delicious roll-ups made with Swiss cheese and corned beef, perfect for a quick snack or appetizer.

- 8 slices Swiss cheese
- 8 slices corned beef
- 0 cups sauerkraut, drained
- 0 cups Thousand Island dressing
- 1 tablespoon avocado oil or butter (for greasing skillet)
Instructions
- Lay out 8 slices of Swiss cheese, 8 slices of corned beef, and drain 0 cup of sauerkraut. Keep 0 cup of Thousand Island dressing ready for dipping or drizzling.
- Heat a nonstick skillet over medium heat and lightly grease with avocado oil or butter.
- Add one slice of Swiss cheese at a time, letting each melt and sizzle until the edges start to brown and bubble, about 2–3 minutes.
- When the cheese is still soft in the middle, place 1 slice of corned beef and a spoonful of sauerkraut on one side of the cheese.
- Gently lift and roll the cheese around the filling like a cigar. Let it cook another 30 seconds to seal, then place seam-side down to set.
- Repeat until all 8 roll-ups are made. Serve warm with Thousand Island dressing for dipping.
