Description
A delicious Thai dessert made with glutinous rice, coconut milk, and ripe mangoes.
Ingredients

- 1 cup glutinous rice
- 1 cup full-fat coconut milk
- 1/4 cup granulated sugar (adjust to taste)
- 1/4 tsp salt
- 2 ripe mangoes
Instructions
- Soak the glutinous rice in water for at least 4 hours or overnight.
- Drain and steam the rice in a bamboo steamer lined with cheesecloth for about 20-30 minutes until tender and translucent.
- In a saucepan, combine coconut milk, sugar, and salt over medium heat. Stir until dissolved but do not boil. Set aside some sauce for drizzling later.
- Transfer cooked rice to a bowl and mix two-thirds of the coconut sauce into it. Let it sit for 10-15 minutes.
- Peel and slice the ripe mangoes into thin wedges.
- To serve, scoop mounds of sticky rice onto plates, drizzle with reserved coconut sauce, and arrange mango slices beside it.
Notes
- Adjust sugar based on your preference for sweetness.
- Use only the best ripe mangoes for optimal taste.
