Description

A delicious Thai dessert made with glutinous rice, coconut milk, and ripe mangoes.

Ingredients

Scale
  • 1 cup glutinous rice
  • 1 cup full-fat coconut milk
  • 1/4 cup granulated sugar (adjust to taste)
  • 1/4 tsp salt
  • 2 ripe mangoes

Instructions

  1. Soak the glutinous rice in water for at least 4 hours or overnight.
  2. Drain and steam the rice in a bamboo steamer lined with cheesecloth for about 20-30 minutes until tender and translucent.
  3. In a saucepan, combine coconut milk, sugar, and salt over medium heat. Stir until dissolved but do not boil. Set aside some sauce for drizzling later.
  4. Transfer cooked rice to a bowl and mix two-thirds of the coconut sauce into it. Let it sit for 10-15 minutes.
  5. Peel and slice the ripe mangoes into thin wedges.
  6. To serve, scoop mounds of sticky rice onto plates, drizzle with reserved coconut sauce, and arrange mango slices beside it.

Notes

  • Adjust sugar based on your preference for sweetness.
  • Use only the best ripe mangoes for optimal taste.
