- 1 French baguette (about 12 oz)
- 4 ripe tomatoes (about 2 cups diced)
- 1 cup fresh basil leaves, chopped
- 3 garlic cloves, minced
- 4 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the baguette diagonally into 1/2-inch pieces.
- Arrange the bread slices on a baking sheet, brush both sides lightly with olive oil, and toast for 5-7 minutes until golden brown.
- In a bowl, combine diced tomatoes, minced garlic, chopped basil, salt, pepper, and a splash of olive oil.
- Once the bread has cooled slightly, top each slice generously with the tomato mixture.
- Drizzle additional olive oil or balsamic glaze if desired. Serve immediately.
Notes
- For added flavor, let the tomato mixture sit for 10-15 minutes before serving.
- This dish is best served fresh, but the tomato mixture can be prepared ahead of time and stored in the refrigerator.
