Description

Delicious grilled pizza with a crispy crust and your favorite toppings.


Ingredients

  • 1¼ cups water (warm (95110 degrees F))
  • 3 tablespoons sugar
  • 2 tablespoons active dry yeast
  • 1 teaspoon salt
  • 4 cups all-purpose flour
  • ½ cup olive oil (to brush on before grilling)
  • 1 cup marinara sauce
  • ½ cup cheese
  • ½ cup pepperoni

Instructions

  1. In the bowl of a stand mixer, combine the warm water, sugar, and yeast and mix well. Let it sit for about 5-10 minutes, or until it becomes frothy and bubbly.
  2. Once your yeast has “proofed,” add the salt and 3 cups of flour. Mix on low speed using the dough hook for about 2 minutes. The dough should appear to be a little stringy.
  3. Add in the rest of the flour, about 1/4 cup at a time until the dough pulls away from the sides of the bowl. Mix on low speed for another 1-2 minutes until the dough is nice and smooth, then transfer to a lightly floured surface.
  4. Divide the dough into 2 equal portions and form them into balls. If you want to use any right away, use your hands to pull and spread to a 12-14″ round, then use as needed. Otherwise, wrap each dough ball tightly with plastic wrap and refrigerate for up to 24 hours.
  5. Preheat grill to 350 degrees F.
  6. Stretch your dough into a 10-12” round, then brush with olive oil. Place the pizza crust, oil side down and cook for 2-3 minutes, or until golden brown on the underside. Brush the top with olive oil and using tongs, flip the pizza.
  7. Close the grill for 2-3 minutes, keeping a close eye on the pizza until you get a feel for how hot your grill is cooking.
  8. Flip the dough over and add a thin layer of sauce, cheese and any toppings that you want. (Note: you’ll want to go light on the cheese because it needs to melt in the time it takes the dough to finish cooking).
  9. Cook for another 2-3 minutes, or until the crust is cooked and the cheese is melted. Turn the heat on the grill down and continue to cook on indirect heat for 3-4 minutes or until the cheese is melted and toppings are cooked.
  10. Remove from the grill and cool on a wire rack for a couple minutes before slicing and serving. Enjoy!
