Ingredients

- 1 pound ground beef (or turkey)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 3 cups beef or vegetable broth
- 1 packet taco seasoning (or homemade blend)
Instructions
- In a large pot over medium heat, add the ground beef (or turkey) and diced onion. Cook until the meat is browned, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the canned diced tomatoes with green chilies, along with their juice.
- Add the drained black beans to the pot, stirring to combine.
- Add three cups of broth to the mixture, bringing it to a simmer.
- Sprinkle in the taco seasoning and stir well. Adjust to taste, adding more if desired.
- Allow the soup to simmer on low heat for about 20-25 minutes, letting the flavors meld together.
- Check the seasoning and adjust salt and pepper as needed.
- Ladle the hot soup into bowls, topping with your favorite garnishes.
