Ingredients

  • 1 pound ground beef (or turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 3 cups beef or vegetable broth
  • 1 packet taco seasoning (or homemade blend)

Instructions

  1. In a large pot over medium heat, add the ground beef (or turkey) and diced onion. Cook until the meat is browned, about 5-7 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the canned diced tomatoes with green chilies, along with their juice.
  4. Add the drained black beans to the pot, stirring to combine.
  5. Add three cups of broth to the mixture, bringing it to a simmer.
  6. Sprinkle in the taco seasoning and stir well. Adjust to taste, adding more if desired.
  7. Allow the soup to simmer on low heat for about 20-25 minutes, letting the flavors meld together.
  8. Check the seasoning and adjust salt and pepper as needed.
  9. Ladle the hot soup into bowls, topping with your favorite garnishes.
