Instructions

  1. Marinate the Lamb Chops: In a bowl, combine olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Coat the lamb chops with the marinade, cover, and let marinate for at least 30 minutes in the refrigerator.
  2. Prepare the Asparagus: Trim the woody ends of the asparagus. Drizzle with olive oil, and season with a pinch of salt and black pepper.
  3. Grill the Lamb Chops: Preheat the grill to medium-high heat. Place the lamb chops on the grill and cook for 4-5 minutes on each side, or until desired doneness. Remove from the grill and let them rest for a few minutes.
  4. Cook the Asparagus: Grill the asparagus for about 4-6 minutes, turning occasionally until tender and slightly charred.
  5. Optional: Prepare Mashed Potatoes: While grilling, prepare mashed potatoes using butter, salt, and pepper to taste.
  6. Serving: Serve the grilled lamb chops on a bed of mashed potatoes (if using) with grilled asparagus on the side. Garnish with lemon wedges and additional fresh herbs if desired.
