- 2 cans (15 oz each) butter or lima beans, drained
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 tablespoons olive oil
- 1 can (15 oz) diced tomatoes
- 1/4 cup water
- 1 tablespoon brown sugar
- 1 teaspoon oregano
- 1/2 teaspoon red pepper flakes
- 2 teaspoons paprika seasoning
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat and sauté the chopped onion until soft and translucent, about 5–7 minutes.
- Add the minced garlic and cook briefly until fragrant.
- Stir in diced tomatoes, water, brown sugar, oregano, red pepper flakes, and paprika seasoning. Let the sauce simmer gently for about 8–10 minutes so it slightly thickens and develops flavor. Season with salt and pepper.
- Fold in the drained butter beans and mix carefully to coat them evenly with the sauce.
- Transfer everything to a baking dish and bake uncovered for about 25 minutes, or until the sauce thickens and the top is slightly caramelized.
- Remove from the oven and garnish generously with fresh parsley before serving.
Notes
- For added flavor, you can add a pinch of cayenne pepper for extra heat.
- Serve with crusty bread or over rice for a complete meal.
