This roasted asparagus and zucchini dish is a healthy and delicious side that pairs well with any meal.

- 1 lb fresh asparagus, trimmed
- 2 medium zucchini, cut into bite-sized pieces
- 4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse asparagus and zucchini under cold water. Trim tough ends off asparagus and cut zucchini into bite-sized pieces.
- In a large bowl, combine asparagus, zucchini, garlic, olive oil, salt, pepper, and lemon juice. Toss until evenly coated.
- Line a baking sheet with parchment paper and spread the vegetable mixture in an even layer.
- Roast for 15-20 minutes until golden edges appear. Serve warm.
