Description

This roasted asparagus and zucchini dish is a healthy and delicious side that pairs well with any meal.


Ingredients

  • 1 lb fresh asparagus, trimmed
  • 2 medium zucchini, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse asparagus and zucchini under cold water. Trim tough ends off asparagus and cut zucchini into bite-sized pieces.
  3. In a large bowl, combine asparagus, zucchini, garlic, olive oil, salt, pepper, and lemon juice. Toss until evenly coated.
  4. Line a baking sheet with parchment paper and spread the vegetable mixture in an even layer.
  5. Roast for 15-20 minutes until golden edges appear. Serve warm.
