Ingredients
Scale
- 1 lb ground beef
- 1 small onion, finely chopped
- 1 packet taco seasoning

- 1 cup canned refried beans
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 cup cooked rice (optional)
- Shredded lettuce

Instructions
- In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, until the mixture thickens slightly.
- Meanwhile, warm the tortillas according to package directions—either in the microwave, oven, or on a dry skillet—until pliable.
- Spread about 1/4 cup of refried beans down the center of each tortilla.
- Spoon a generous portion of the seasoned ground beef over the beans.
- Top with shredded cheese, rice (if using), lettuce, tomatoes, sour cream, and salsa as desired.
- Fold the sides of the tortilla over the filling, then roll up tightly from the bottom to enclose.
- Serve immediately, or wrap in foil to keep warm.
