Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup canned refried beans
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup cooked rice (optional)
  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Salsa

Instructions

  1. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.
  2. Stir in the taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, until the mixture thickens slightly.
  3. Meanwhile, warm the tortillas according to package directions—either in the microwave, oven, or on a dry skillet—until pliable.
  4. Spread about 1/4 cup of refried beans down the center of each tortilla.
  5. Spoon a generous portion of the seasoned ground beef over the beans.
  6. Top with shredded cheese, rice (if using), lettuce, tomatoes, sour cream, and salsa as desired.
  7. Fold the sides of the tortilla over the filling, then roll up tightly from the bottom to enclose.
  8. Serve immediately, or wrap in foil to keep warm.
