Description

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). Grease and line a rectangular cake pan with parchment paper. In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside. In a large mixing bowl, beat the eggs and sugar together until pale and fluffy. Gradually add the melted butter and vanilla extract to the egg mixture, mixing well. Fold in the dry ingredients until well combined and smooth.
  2. Bake the Cake: Pour the batter into the prepared cake pan, smoothing the top. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before removing from the pan.
  3. Prepare the Whipped Cream: In a chilled mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Beat with a mixer on medium-high speed until stiff peaks form. Keep refrigerated until needed.
  4. Assemble the Cake: Slice the cooled cake horizontally into two equal layers. Spread a layer of cherry jam on the bottom half of the cake. Spread half of the whipped cream over the jam, then evenly distribute the halved cherries on top. Place the second cake layer on top and spread the remaining whipped cream over the surface.
  5. Decorate: Garnish with dark chocolate shavings and fresh cherries on top.
