Ingredients

  • 2 boneless, skinless chicken breasts
  • 300g (about 10 oz) fusilli pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon red chili flakes (adjust to taste)
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into bite-sized pieces. Season the chicken with salt, pepper, and a sprinkle of chili flakes.
  2. Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. Cook the Pasta: In a large pot of boiling salted water, cook the fusilli pasta according to package instructions until al dente. Drain the pasta, reserving 1 cup of pasta water.
  4. Make the Creamy Sauce: In the same skillet used for the chicken, add 1 tablespoon of butter and minced garlic over medium heat. Sauté the garlic until fragrant, about 1 minute. Lower the heat and add heavy cream, stirring occasionally, until it starts to simmer. Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy. Add the chili flakes to the sauce and season with salt and pepper to taste.
  5. Combine Ingredients: Add the cooked pasta to the creamy sauce, tossing gently to combine. If the sauce is too thick, add some reserved pasta water, a little at a time, until the desired consistency is reached. Add the cooked chicken back into the skillet and mix well to coat the chicken and pasta evenly with the sauce.
  6. Serve: Transfer the creamy spicy chicken pasta to serving plates. Garnish with freshly chopped parsley and additional chili flakes for extra heat.
