Description

A delicious creamy pasta dish featuring miso and mushrooms.


Ingredients

  • 8 oz spaghetti or fettuccine
  • 3 tbsp white or yellow miso paste
  • 4 cloves fresh garlic, minced
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • to taste Salt and pepper

Instructions

  1. Cook pasta according to package instructions in salted water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet over medium heat, add olive oil and sauté mushrooms until golden brown, about 5 minutes.
  3. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. Stir in miso paste, cream, and reserved pasta water; mix well and simmer for about 2 minutes until the sauce thickens slightly.
  5. Toss cooked pasta into the sauce along with Parmesan cheese; stir until evenly coated.
  6. Serve immediately, garnished with extra Parmesan if desired.
