Description
A delicious and healthy carrot hummus served with crispy zaatar pita chips.
Ingredients
Scale
- 2 cups carrots, peeled and chopped
- 1/3 cup tahini
- 2 cloves garlic, minced
- 3 tbsp lemon juice
- 2 tbsp extra virgin olive oil (plus more for drizzling)
- 1 tsp salt (adjust to taste)
- 1 tsp zaatar spice blend
- 2 pita breads
Instructions
- Preheat oven to 400°F (200°C). Toss chopped carrots in olive oil, salt, and pepper; spread on a baking sheet. Roast for 25-30 minutes until tender.
- In a food processor, blend roasted carrots with tahini, garlic, lemon juice, and olive oil until smooth. Adjust seasoning to taste.
- Cut pita bread into triangles; brush with olive oil and sprinkle with zaatar. Bake for 8-10 minutes until golden brown.
- Serve carrot hummus drizzled with olive oil alongside the zaatar pita chips.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the hummus.
