Description

A delicious and healthy carrot hummus served with crispy zaatar pita chips.


Ingredients

Scale
  • 2 cups carrots, peeled and chopped
  • 1/3 cup tahini
  • 2 cloves garlic, minced
  • 3 tbsp lemon juice
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • 1 tsp salt (adjust to taste)
  • 1 tsp zaatar spice blend
  • 2 pita breads

Instructions

  1. Preheat oven to 400°F (200°C). Toss chopped carrots in olive oil, salt, and pepper; spread on a baking sheet. Roast for 25-30 minutes until tender.
  2. In a food processor, blend roasted carrots with tahini, garlic, lemon juice, and olive oil until smooth. Adjust seasoning to taste.
  3. Cut pita bread into triangles; brush with olive oil and sprinkle with zaatar. Bake for 8-10 minutes until golden brown.
  4. Serve carrot hummus drizzled with olive oil alongside the zaatar pita chips.
