- 2 tablespoons unsalted butter, divided
- ½ cup finely chopped yellow onion
- 2 garlic cloves, minced
- ½ cup diced red bell pepper
- ½ cup diced yellow bell pepper
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- ¼ cup sliced green onions (white and green parts separated)
- 2½ pounds large shrimp, peeled and deveined
- 2 teaspoons Cajun seasoning
- ½ teaspoon smoked paprika
- Zest of 1 lemon
- 1 (14 ounces) can petite diced tomatoes
- 1 cup heavy cream
- ¼ cup chopped fresh parsley
Instructions
- Melt 1 tablespoon of butter in a large skillet over medium-high heat. Add the onion and garlic, cooking for about 2 minutes until fragrant.
- Stir in the red and yellow bell peppers along with the mushrooms. Cook for 4–5 minutes, or until the peppers soften and the mushrooms release their juices. Transfer the mixture to a bowl and set aside.
- Add the remaining tablespoon of butter to the skillet. Once melted, add the shrimp along with the Cajun seasoning, smoked paprika, and lemon zest. Cook for 4–5 minutes, stirring as needed, until the shrimp are pink and fully cooked. Remove and set aside.
- Pour the diced tomatoes into the skillet, stirring to loosen any browned bits on the bottom. Return the cooked vegetable mixture and bring to a gentle boil. Simmer for 5 minutes.
- Add the heavy cream and return to a simmer, cooking for about 7 minutes or until slightly thickened.
- Stir in the spinach and cook just until wilted. Add the shrimp back into the sauce and fold gently to combine.
- Top with the green parts of the sliced onions and fresh parsley. Serve warm over rice, pasta, mashed potatoes, or toasted bread.
