Description

Deliciously fluffy rolls made with cottage cheese and fresh herbs, perfect for any meal.

Ingredients

Scale
  • 1 cup cottage cheese
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons fresh herbs, finely chopped (such as basil, parsley, or chives)
  • 1 tablespoon olive oil or melted butter (optional)
  • 1 large egg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Stir well to ensure everything is evenly mixed.
  3. In a separate bowl, mix the cottage cheese, olive oil (if using), and egg (if using) until smooth and well combined.
  4. Add the wet mixture to the dry ingredients and incorporate gently with a spatula until just combined. Be careful not to overmix!
  5. Fold the chopped herbs into the mixture, ensuring they are evenly distributed throughout the dough.
  6. Using a tablespoon or an ice cream scoop, portion the dough and place each scoop onto the prepared baking sheet, leaving some space between each roll.
  7. Bake in the preheated oven for about 15-20 minutes or until the rolls are golden brown and cooked through.
  8. Once baked, let them cool slightly on a wire rack. Serve warm and enjoy!
