Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Stir well to ensure everything is evenly mixed.
- In a separate bowl, mix the cottage cheese, olive oil (if using), and egg (if using) until smooth and well combined.
- Add the wet mixture to the dry ingredients and incorporate gently with a spatula until just combined. Be careful not to overmix!
- Fold the chopped herbs into the mixture, ensuring they are evenly distributed throughout the dough.
- Using a tablespoon or an ice cream scoop, portion the dough and place each scoop onto the prepared baking sheet, leaving some space between each roll.
- Bake in the preheated oven for about 15-20 minutes or until the rolls are golden brown and cooked through.
