Ingredients

  • 1 lb Andouille sausage, sliced
  • 1 cup bell peppers (red, yellow, green), chopped
  • 1 medium onion, finely chopped
  • 1 cup celery, chopped
  • 14 oz diced tomatoes (with juice)
  • 4 cups chicken broth
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 1 cup okra (optional)
  • 2 cups cooked white or brown rice

Instructions

  1. In a large pot over medium heat, sauté sliced sausage until browned.
  2. Add chopped onions, bell peppers, and celery; cook until softened.
  3. Stir in diced tomatoes and chicken broth; mix well.
  4. Sprinkle in Cajun seasoning; adjust to taste.
  5. Add shrimp and okra (if using) when the mixture begins to bubble; cook until shrimp are pink and opaque (about 5 minutes).
  6. Serve hot over cooked rice and garnish with fresh parsley.
