Ingredients

  • 1/2 cup fresh strawberries, finely chopped
  • 1/4 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra shredded coconut and freeze-dried strawberries for coating

Instructions

  1. Prepare the Mixture:
    • In a large mixing bowl, combine the shredded coconut, almond flour, and a pinch of salt.
    • Add in the finely chopped fresh strawberries.
    • Pour in the melted coconut oil, maple syrup (or honey), and vanilla extract.
    • Mix well until everything is combined and holds together when pressed.
  2. Shape the Balls:
    • Use a tablespoon to scoop out the mixture, then roll it into balls using your hands. Aim for uniform sizes for even chilling.
  3. Coat the Balls:
    • In a separate bowl, mix extra shredded coconut with crushed freeze-dried strawberries.
    • Roll each ball in the coating mixture until fully covered.
  4. Chill:
    • Place the bliss balls on a plate or tray lined with parchment paper.
    • Chill in the refrigerator for at least 30 minutes until firm.

Notes

  • For a different texture, try adding some chopped nuts or seeds to the mixture.
