Description

A delicious and creamy chicken zucchini bake that is perfect for a comforting dinner.

Ingredients

Scale
  • 2 large chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the oven and ingredients your oven to 375°F (190°C). Lightly grease a baking dish. Slice the zucchini into even rounds and dice the chicken into bite-sized pieces. Keeping everything uniform helps it cook evenly.
  2. Sauté for flavor olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and fragrant. Stir in the garlic and cook for about 30 seconds. Add the diced chicken, season with salt, pepper, paprika, and Italian seasoning. Cook until the chicken is lightly golden but not fully cooked through. This step reminds me of standing at the stove while everyone drifts into the kitchen, drawn by the smell of garlic and herbs.
  3. Create the creamy base in the chicken broth and heavy cream. Let it simmer gently for 3–4 minutes until slightly thickened. This creates the rich sauce that makes Chicken Zucchini Bake so irresistible.
  4. Layer the casserole the zucchini slices evenly in the baking dish. Spoon the chicken and cream mixture over the top, spreading it evenly. Sprinkle mozzarella and Parmesan generously over everything.
  5. Bake to perfection uncovered for 25–30 minutes, or until the cheese is bubbly and golden and the zucchini is tender. Let it rest for 5–10 minutes before serving so the sauce can set. When you scoop it onto a plate, you will see layers of creamy sauce, juicy chicken, and tender zucchini held together by melted cheese.
