- 4–6 ounces Grilled Chicken Breast (Sliced)
- 1 teaspoon Taco Seasoning (Store-bought or homemade)
- 0 cup Roasted Corn (Fresh or frozen)
- 0 cup Guacamole (Homemade or store-bought)
- 0 cup Shredded Cheese (Cotija, feta, or low-fat Mexican blend)
- 1 cups Chopped Lettuce (Romaine or butter lettuce)
- 2 tablespoons Plain Greek Yogurt (Thin with lime juice if needed)
- 1 handful Fresh Cilantro (Optional)
- 1 wedge Lime (To serve alongside)
Instructions
- Prepare Chicken: Season your chicken slices evenly with taco seasoning. If using pre-cooked chicken, gently warm it in a skillet for a few minutes until heated through and slightly caramelized for extra flavor.
- Char Corn: Heat a dry skillet over medium-high heat, then add the corn. Cook without stirring initially for 3-4 minutes to get a good char. Toss and continue cooking until tender with lovely golden-brown spots.
- Build Base: Arrange a generous bed of chopped lettuce in your serving bowl. This forms the crisp, fresh foundation for all those delicious toppings.
- Layer Toppings: Add the warmed seasoned chicken over the lettuce. Follow with the charred corn and generous dollops of creamy guacamole. Sprinkle your chosen shredded cheese evenly over the top.
- Finish: Drizzle the Greek yogurt over everything. If it’s a bit thick, a tiny splash of lime juice makes it perfect for drizzling. Garnish with fresh cilantro and serve with a lime wedge.
