Description

A delicious and creamy chicken pasta bake with broccoli and cheese.


Ingredients

  • 8 ounces pasta (penne or rotini)
  • 2 cups cooked chicken breast, diced
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Cook pasta in boiling salted water according to package directions until al dente, then drain.
  3. While pasta cooks, heat olive oil in a skillet over medium heat, add chicken, and cook until lightly browned, then remove and set aside.
  4. In the same skillet, add onion and garlic and sauté until fragrant and translucent.
  5. Add butter to the skillet and melt, then stir in flour to form a roux and cook for one minute.
  6. Gradually whisk in milk and heavy cream, stirring constantly until sauce thickens.
  7. Remove sauce from heat and stir in cheddar and mozzarella cheese, salt, and pepper until melted and smooth.
  8. Combine cooked pasta, chicken, broccoli, and cheese sauce in a large bowl and stir to coat evenly.
  9. Transfer mixture to a baking dish and top with additional cheese if desired.
  10. Bake uncovered for 20 minutes or until bubbly and golden on top.

Notes

  • Feel free to add more vegetables like bell peppers or spinach.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
