  • 2 cups fresh cherries, pitted
  • 1/2 cup almond slices
  • 1 tsp almond extract
  • 1/4 cup powdered sugar
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg (beaten with 1 tbsp of water for egg wash)

Instructions

  1. Prepare the Pastry: Preheat the oven to 375°F (190°C). Roll out the puff pastry sheet on a lightly floured surface. Cut into a large ring shape and place on a baking sheet lined with parchment paper.
  2. Prepare the Filling: In a bowl, whip the cream cheese and granulated sugar until smooth. Add heavy cream, vanilla extract, and almond extract. Whisk until the mixture is thick and holds peaks. Set aside.
  3. Assemble the Pastry: Place the cream mixture in the center of the pastry ring. Top with fresh cherries, slightly pressing them into the cream.
  4. Bake: Brush the edges of the pastry with egg wash. Bake in the preheated oven for 20-25 minutes or until golden brown.
  5. Finishing Touches: Allow the pastry to cool slightly. Dust with powdered sugar and sprinkle almond slices on top.
