- 1 puff pastry sheet (store-bought or homemade)
- 2 cups fresh cherries, pitted
- 1/2 cup almond slices
- 1 tsp almond extract
- 1/4 cup powdered sugar
- 1 cup heavy cream
- 4 oz cream cheese
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 egg (beaten with 1 tbsp of water for egg wash)
Instructions
- Prepare the Pastry: Preheat the oven to 375°F (190°C). Roll out the puff pastry sheet on a lightly floured surface. Cut into a large ring shape and place on a baking sheet lined with parchment paper.
- Prepare the Filling: In a bowl, whip the cream cheese and granulated sugar until smooth. Add heavy cream, vanilla extract, and almond extract. Whisk until the mixture is thick and holds peaks. Set aside.
- Assemble the Pastry: Place the cream mixture in the center of the pastry ring. Top with fresh cherries, slightly pressing them into the cream.
- Bake: Brush the edges of the pastry with egg wash. Bake in the preheated oven for 20-25 minutes or until golden brown.
- Finishing Touches: Allow the pastry to cool slightly. Dust with powdered sugar and sprinkle almond slices on top.
Notes
- Ensure the puff pastry is cold before baking for better puffing.
- Substitute fresh cherries with canned ones if not in season, but drain them well.
- For added flavor, toast the almond slices lightly before topping the pastry.
