Description

A delicious and hearty Cheesy Zucchini Casserole Bake combining layers of zucchini, cheese, and a savory egg mixture.


Ingredients

  • 3 medium zucchinis, sliced
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup grated Parmesan cheese
  • 4 large eggs
  • 1 cup breadcrumbs
  • 1 cup milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Zucchini: Wash and slice the zucchinis into thin rounds. Lightly salt them and let sit for 10 minutes to release excess moisture. Pat dry with paper towels.
  3. Cook Onions and Garlic: In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is soft and translucent. Remove from heat and let it cool slightly.
  4. Mix Ingredients: In a large bowl, beat the eggs and add milk, sautéed onion and garlic, half of the shredded cheese, breadcrumbs, oregano, basil, salt, and pepper. Mix well.
  5. Assemble the Casserole: In a greased baking dish, layer half the zucchini slices. Pour half of the egg mixture over the zucchini. Sprinkle with half of the remaining shredded cheese and half of the Parmesan cheese. Repeat the layers.
  6. Bake the Casserole: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the cheese is golden and bubbly.
  7. Rest and Serve: Let the casserole sit for about 10 minutes before slicing and serving.

Notes

  • If you want additional flavor, try adding cooked and crumbled bacon or diced cooked ham to the layers.
  • For a crispy topping, mix some breadcrumbs with melted butter and sprinkle over the casserole before baking.
