- 1 large head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- ½ teaspoon chili powder
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, chili powder, salt, and pepper until well-coated.
- Spread the cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25–30 minutes, or until golden brown and tender.
- Drain the soaked cashews and add them to a blender along with lime juice, cilantro, garlic, salt, and water. Blend until smooth, adding more water as needed for desired consistency.
- In a skillet, warm the tortillas on medium heat for about 30 seconds on each side or until pliable.
- Fill each tortilla with roasted cauliflower, add avocado slices, and drizzle with cilantro lime crema. Garnish with fresh cilantro.
