Ingredients

  • 8 small corn or flour tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, chili powder, salt, and pepper until well-coated.
  3. Spread the cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25–30 minutes, or until golden brown and tender.
  4. Drain the soaked cashews and add them to a blender along with lime juice, cilantro, garlic, salt, and water. Blend until smooth, adding more water as needed for desired consistency.
  5. In a skillet, warm the tortillas on medium heat for about 30 seconds on each side or until pliable.
  6. Fill each tortilla with roasted cauliflower, add avocado slices, and drizzle with cilantro lime crema. Garnish with fresh cilantro.
