Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 2 cups corn kernels (fresh or frozen)
  • 2 medium potatoes, peeled and diced
  • 1 small onion, finely diced
  • 1 stalk celery, chopped
  • 1/2 green bell pepper, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cups chicken or seafood broth
  • 1 cup heavy cream
  • 1 to 2 teaspoons Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Green onions or parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, celery, and green bell pepper. Cook for 4 to 5 minutes until softened.
  3. Add minced garlic and cook for 30 seconds.
  4. Sprinkle flour over vegetables and stir for 1 minute.
  5. Slowly pour in broth while stirring constantly.
  6. Add diced potatoes and corn.
  7. Bring to a gentle boil, then reduce heat.
  8. Simmer for 12 to 15 minutes until potatoes are tender.
  9. Stir in heavy cream, Cajun seasoning, smoked paprika, salt, and pepper.
  10. Add shrimp and cook for 3 to 4 minutes until pink and opaque.
  11. Taste and adjust seasoning if needed.
  12. Remove from heat and rest for 5 minutes.
  13. Garnish and serve hot.
