- 1 lb raw shrimp, peeled and deveined
- 2 cups corn kernels (fresh or frozen)
- 2 medium potatoes, peeled and diced
- 1 small onion, finely diced
- 1 stalk celery, chopped
- 1/2 green bell pepper, diced
- 2 cloves garlic, minced
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 3 cups chicken or seafood broth
- 1 cup heavy cream
- 1 to 2 teaspoons Cajun seasoning
- 1/2 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- Green onions or parsley for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, celery, and green bell pepper. Cook for 4 to 5 minutes until softened.
- Add minced garlic and cook for 30 seconds.
- Sprinkle flour over vegetables and stir for 1 minute.
- Slowly pour in broth while stirring constantly.
- Add diced potatoes and corn.
- Bring to a gentle boil, then reduce heat.
- Simmer for 12 to 15 minutes until potatoes are tender.
- Stir in heavy cream, Cajun seasoning, smoked paprika, salt, and pepper.
- Add shrimp and cook for 3 to 4 minutes until pink and opaque.
- Taste and adjust seasoning if needed.
- Remove from heat and rest for 5 minutes.
- Garnish and serve hot.
