Description

A hearty vegetable soup filled with nutritious ingredients.


Ingredients

  • 2 tablespoons oil
  • 4 cups chopped green cabbage (about 1/3 large head)
  • 3 large carrots (peeled and chopped)
  • 2 ribs celery (finely chopped)
  • 1 medium onion (finely chopped)
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 2 cloves garlic (finely minced)
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups low sodium chicken or vegetable broth
  • 1 can (28oz/798ml) diced tomatoes

Instructions

  1. In a large soup pot, heat oil over medium heat.
  2. Add cabbage, carrots, celery and onion and cook, stirring often, until onion is translucent, about 5 minutes.
  3. Add the tomato paste, Italian seasoning, garlic, salt and pepper. Cook and stir for 1-2 minutes.
  4. Add broth and tomatoes. Bring to a simmer, cover and reduce heat to medium-low.
  5. Simmer, stirring occasionally, until all vegetables are tender (40-60 minutes, depending on your preferred consistency).
  6. Season to taste and serve.

Notes

  • This soup can be made ahead of time and stored in the fridge for up to 5 days.
  • For a thicker soup, reduce the amount of broth or cook longer.
  • Add your favorite vegetables or herbs for variation.
