- 2 pieces boneless, skinless chicken breasts (pounded to even thickness)
- 3 cups fresh spinach (roughly chopped)
- 4 oz cream cheese (softened for easy mixing)
- 1 cup shredded cheddar cheese
- 2 cloves garlic (minced)
- 1/2 cup milk (whole or any preferred milk)
- Salt, Pepper, Nutmeg Seasonings (to taste)
- 1/4 cup shredded cheese (additional topping, optional)
Instructions
- Preheat your oven to 180°C (350°F) and prepare a 9×13 inch baking dish.
- Pound the chicken breasts to an even thickness of about 1 cm, then season them generously with salt and pepper.
- Heat a skillet over medium heat, add a splash of oil, and sear the chicken for about 3-4 minutes per side until golden brown and cooked through. Remove and let rest for a few minutes.
- In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, then toss in the chopped spinach. Sauté for 2 minutes until wilted and vibrant green. Remove from heat.
- In a mixing bowl, whisk together the softened cream cheese, milk, and shredded cheddar until smooth and creamy.
- Slice the rested chicken into strips. Spread the wilted spinach evenly in the prepared baking dish, then layer the chicken slices on top.
- Pour the cheesy sauce over the layered spinach and chicken, spreading it out evenly with a spatula.
- Sprinkle additional shredded cheese on top if desired, then cover loosely with aluminum foil.
- Bake for 20 minutes covered, then remove the foil and bake for another 10 minutes until bubbling and golden around the edges.
- Let the casserole rest for about 5 minutes after removing from the oven, allowing the cheese to set.
- Garnish with chopped parsley or herbs if desired, then serve hot, scooping generous portions onto plates.
Notes
- For added flavor, you can mix in other herbs and spices according to your preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
