Description

A delicious creamy casserole featuring tender chicken and vibrant spinach, topped with melted cheese.


Ingredients

  • 2 pieces boneless, skinless chicken breasts (pounded to even thickness)
  • 3 cups fresh spinach (roughly chopped)
  • 4 oz cream cheese (softened for easy mixing)
  • 1 cup shredded cheddar cheese
  • 2 cloves garlic (minced)
  • 1/2 cup milk (whole or any preferred milk)
  • Salt, Pepper, Nutmeg Seasonings (to taste)
  • 1/4 cup shredded cheese (additional topping, optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a 9×13 inch baking dish.
  2. Pound the chicken breasts to an even thickness of about 1 cm, then season them generously with salt and pepper.
  3. Heat a skillet over medium heat, add a splash of oil, and sear the chicken for about 3-4 minutes per side until golden brown and cooked through. Remove and let rest for a few minutes.
  4. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, then toss in the chopped spinach. Sauté for 2 minutes until wilted and vibrant green. Remove from heat.
  5. In a mixing bowl, whisk together the softened cream cheese, milk, and shredded cheddar until smooth and creamy.
  6. Slice the rested chicken into strips. Spread the wilted spinach evenly in the prepared baking dish, then layer the chicken slices on top.
  7. Pour the cheesy sauce over the layered spinach and chicken, spreading it out evenly with a spatula.
  8. Sprinkle additional shredded cheese on top if desired, then cover loosely with aluminum foil.
  9. Bake for 20 minutes covered, then remove the foil and bake for another 10 minutes until bubbling and golden around the edges.
  10. Let the casserole rest for about 5 minutes after removing from the oven, allowing the cheese to set.
  11. Garnish with chopped parsley or herbs if desired, then serve hot, scooping generous portions onto plates.
