Lemon Pudding Cake

Description

A delicious lemon pudding cake topped with a sweet glaze.


Ingredients

Scale
  • 4 Eggs (Large, Room temperature)
  • 3/4 cup Oil
  • 3/4 cup 7 Up
  • 1 box Yellow cake mix (15 oz. box)
  • 1 box Lemon pudding mix (4 oz. box, I have tried making this with 3 oz boxes and that worked well too)
  • 2 cups Powdered sugar (Sifted)
  • 2 tbsp Lemon juice (From fresh lemon)
  • 12 tbsp Milk (Preferably whole but can use 2%, Room temperature)

Instructions

  1. In a large mixing bowl, add eggs, oil, 7 up and mix until smooth.
  2. Add cake mix, lemon pudding mix and mix until just combined.
  3. Pour batter in a greased and floured bundt pan (10 inch pan).
  4. Bake at 325 degrees F for 45-55 minutes or until an inserted toothpick in the center comes out clean.
  5. Let it cool down completely.
  6. While it’s cooling, prepare glaze by mixing together powdered sugar, lemon juice and milk until smooth.
  7. Place cake on a dish or stand and drizzle glaze on top of cake.
  8. Enjoy!

Notes

  • This recipe can also be made using 3 oz boxes of lemon pudding mix successfully.
  • For best results, ensure all ingredients are at room temperature.
